Ingredients

275 g / 9,5 oz

2 tea spoons

sugar
lemon juice
flour
yolk
powder sugar
white of eggs
cacao
vanillin sugar
water, hand warm
cacao for powdering
rum
truffle pralines
 
Preparation

Beat up the yolks. Add from time to time some sugar, salt, vanillin sugar, lemon juice and hand-warm water. Beat the mixture until it is creamy. Then beat the white of the eggs so long that a knife can cut it. Add the strained powder sugar and the raped peel of the lemons. Mix little parts of this foam under the yolk-crème. Strain the flour and mix it in small portions with the crème. Bake from this pastes 8 thin cakes. Use a round, greased cake-tin. Bake every of the 8 cakes between 10 and 12 minutes at 200
° C / 390 ° F. Cool the cakes.
 
For the chocolate-butter-crème put first the sugar in a pan and just cover it with water. During you stir it up cook it and set it cool when the sugar is solved. Beat up the butter with the pinch salt in a bowl creamy, add the cacao and mix it carefully. Then add in little portions the sugar syrup in the butter. At the end add the rum and vanillin sugar. Mix it carefully.
 
Spread the chocolate-butter-crème evenly over the cakes and left one cake without crème. Staple the cakes on each other and cover the edge with crème. The rest of the crème fill into a spout and put it in the fridge. Keep the cake on a side and cover the edge with cacao powder. Put the cake in the fridge for an hour.

In the meanwhile warm up the sugar stirring up for the caramel cover in a pan with very little heat until it is golden. Add the lemon juice until the caramel is fluid again and cover with this mixture the last cake. This cake you divide with a sharp and buttered knife into 12 pieces. Put these pieces onto the cake in the fridge. Decorate every piece with the rest of the crème and the pralines.
