Over Cherry Wood Fumed Goose Liver Over Cherry Wood Fumed Goose Liver
As main dish for 4 persons, as starter for 8 persons
   
Ingredients
600 g / 21 oz

2 cups
goose liver
salt
cherry wood splinters
 
Preparation

Salt the goose liver and put it onto a roast that lay across a pan. Warm up the oven to 175 F. Put in a small iron pan half of the humid cherry wood splinters. Put the pan with the liver in the middle of the oven and the pan with the smoking splinters there under. The smoke must be controlled often. Replace the glow and add new cherry wood splinters.
 
Serving

When the smoked liver should be eaten warm serve it in one piece. Serve it with fried onion-potatoes and roasted onion-rings. But the meal can also been served as cold starter with roasted brioches.
