Paprika Roulades for 4 persons |

4 250 g / 8,5 oz 3 1/4 l / 8,5 oz 1/4 l / 8,5 oz 1 2 3 table spoons 4 tea spoons |
beef roulades smoked bacon red paprika dry red wine fond of veal large onion Spanish peppers tomato purée mustard oil for frying salt pepper |

Preparation Strike the mustard over the roulades and spice them with salt and pepper. Cut the paprikas in slices, the onion and the smoked bacon into cubes and spread onions, bacon and a third of the paprika over the roulades. Roll in the roulades from the breed side and close them with twist. Heat the oil in a casserole and fry the roulades at all their sides until they are evenly brown. Add the red wine and the fond and braise it for about 10 minutes. In the meanwhile cut the rest of the paprika rings to cubes. Cut the Spanish peppers fine. Add the paprika and Spanish peppers to the fond and braise it for about an hour. At the end of the preparation take the roulades out of the pan and reduce the fond and thicken it with the tomato purée. Let it cook until it is a creamy sauce, spice it with salt and pepper. |
