For the mushrooms
mushrooms (even large)
chicken liver
onions
salt
pepper
marjoran
laurel
thyme
butter
brandy
flour
milk

For the Egri Sauce
flour
eggs
crushed rolls

For the sauce
butter
soup vegetables
pork bones
onion
salt
pepper
garlic
laurel
thyme
sugar
tomato purée
Egri Bikaver (red wine)
 
Preparation

The liver crème
Fry the onions in butter, cut the liver into small pieces and add it to the onions. Spice it with salt, pepper, marjoram, thyme and a leaf of laurel, cover it with flour. Braise it for some little moments. Add milk and let it cook shortly. Mix the brandy and the eggs, add it and let it cook stirring up shortly. Take it from the fire and strike it through a fine strainer. Cool it and spice again.

The sauce
Smash the bones and cut the soup vegetables and fry all in butter. Add the fine cut onion and sugar and wait until it is brown then add tomato purée and spices three pints of water and the red wine. Cook it at least 90 minutes on little fire. In the meanwhile brown the flour without grease. Take the bones out of the soup and thicken the soup with the brown flour. Cook this sauce well and strike with the vegetables through the strainer, spice again.

The mushrooms
Cut the stalks off the mushrooms away and clean them. Put liver crème between two mushroom heads and press them well onto each other. Then cover with flour, dress them with egg and the crushed rolls; fry in oil.
 
Serving

Serve with the hot sauce and rice.
