For the pörkölt (goulash)
sunflower oil
fine cut
garlic
spicy paprika
veal (shoulder),
cut in cubes
salt
tomatoes, peeled
and cut in large cubes
paprikas,
cut in cubes
hot paprika
coloured (green, yellow, red) paprika,
cut in cubes
sunflower oil

Nockerln (pasta)
flour
eggs
salt
sunflower oil
 
Preparation

Pörkölt

Heat the oil in a pan and roast the onions therein golden-brown. Take the pan from the fire and spice with paprika, stir up, add three cups of water, the cubes of meat and let it cook, salt it and braise covered on little heat. When the braise time is past for three quart (20-25 minutes) add the tomatoes and paprikas, when desired also the hot paprika and go on braising. Keep warm until serving.
 
Nockerln

Cook in a large pan two quarts of water with 4 tea spoons salt. Mix in a bowl the flour with the eggs, 1 tea spoon salt and 2/3 cups of water. When the water starts boiling, give a part of the past onto a humid kitchen-plank and cut it with a wet knife in finger-thick stripes, from this stripes cut finer stripes (about 5 stripes on one inch) directly into the boiling water; keep the knife always wet. Make pasta this way of all the past. While cutting and boiling stir up regularly. When the pasta is swimming on the water strain it and wash under warm water. Let it dry well, turn it through the oil and serve.
 
Serving

Put the pasta onto 4 warmed plates, form a hole in the middle and put the pörkölt with the juice in the ring of pasta. Decorate with the cubes of paprika, shortly roasted in oil.
